Stealing from their Website, which I have to do as there is no menu per se: Chef Denis is spot-on when it comes to the balance of flavours, incorporating elements subtle enough to lend their whispers without taking away the glory of the main ingredients.
Here, the star is the turbot, poached together with Sicilian Mazara red prawns. Texture was made wonderful with the prawns which added bite and slight crunch to the soft turbot.
