But, not just one King George Whiting Recipe, as today I am giving you two in one to add to your very own Pan-Fried Whiting Fish Recipes and Baked Whiting Fish Recipes. I’ll be explaining what temp to fry fish and how long to bake whiting fish, so read on.

I had bought some amazing King George Whiting fillets from my mate Shaun at Butcher Box Joo Chiat, and thought it’s about time to use them so I came up with two new recipes using bits and pieces I had in the fridge and created two amazing, but simple King George Whiting Recipes.

The King George Whiting Recipe is a dish that is best made from fresh seafood. You can buy frozen, of course, but I would always be favouring fresh seafood in any recipe in fact.

I remember days back in Melbourne watching Rex Hunt’s Fishing Adventures. A bearded fisherman who always used to kiss the fish that he caught, which is a rather strange thing to do. Rex and his mate, Bushy (because of his monster moustache), used to then do some cooking, and one of their absolute favourite fish was King George Whiting because of its versatility and taste of course.

#1 King George Whiting Recipe Pan-Fried ‘w’ Breadcrumbs, Crushed Hazelnuts & Ghee

To serve 3 people with this King George Whiting Recipe you will need the following;

  • 6 King George Whiting fillets with the skin on
  • 1/2 cup of crushed Hazelnuts
  • 2″ knob of Ghee or salted butter
  • 1/2 cup Panko breadcrumbs
  • Olive oil
  • Sea salt & Kampot cracked black pepper
  • Finely sliced Spring onion tops for garnish

Here we go, you'll now find out what temp to fry fish from our Whiting fillet recipes

  1. You’ll be pan-frying this one so get your Scanpan (if you have one) out and on the gas hob
  2. Rinse the King George Whiting fillets in fresh water and pat dry
  3. Rub both sides of the Whiting fillets with a little Olive oil
  4. Season with sea salt & cracked Kampot black pepper
  5. Dust both sides with a little corn starch
  6. Sprinkle the skin side with the breadcrumbs and the crushed Hazelnuts
  7. Add a little Olive oil to the pan and pop in the Ghee and get that on the heat until hot & smoking
  8. Lay the Whiting fillets in meat side down and fry off until a nice brown crust shows and then use a fish slice to flip them over;
  9. When you flip them try to keep the Hazelnuts under the skin
  10. Continue to fry until all cooked through and the skin is crisped and the Hazelnuts are toasted
  11. Plate that up on a platter with skin side down and spoon over some toasted Hazelnuts and a little sliced Spring onion like the picture

#2 Best King George Whiting Recipe: Baked 'w' Citrus

To serve 3 people with this King George Whiting Recipe you will need the following;

  1. 6 King George Whiting double-fillets with the skin on still
  2. 2 fresh lemons cut into slices
  3. Olive oil
  4. Sea salt & cracked Kampot black pepper
  5. A yellow sweet pepper that you simply chop into small pieces for garnish

  1. You’ll be baking this one so you’ll need a little roasting tray
  2. Rinse the fillets in fresh water and pat dry
  3. Lay the sliced lemons in the tray
  4. Drizzle Olive oil on both sides of the Whiting fish fillets
  5. Season both sides with sea salt & cracked Kampot black pepper;
  6. Lay the Whiting fillets on top of the lemon slices
  7. Pop the roasting tray into the oven at 170 degrees for about 10-15 minutes until cooked through (stab a thick piece with a sharp knife and place on your top lip, if hot all the way along = perfectly cooked)
  8. Plate that up on a platter with skin side down, lay some of the lemons on top and a sprinkle of the finely chopped sweet pepper
