Fried fish fillet with prawns, in a cream of mushroom sauce

Fried fish fillet with prawns, with a cream of mushroom sauce

A new fish dish, that began with my Mary saying; “Don’t forget we have leftovers.” What she actually meat was, we have a fish fillet and about 6 prawns remaining from what I had cooked the day before. I stared at this, and then created Fried fish fillet with prawns, with a cream of mushroom sauce.

I think that looks kind of nice, even as a non-fish lover!

This will serve about 2-4 depending on hunger levels:

  • 1 firm white fish fillet – cod, snapper etc;
  • 6-8 shelled prawns (A couple each person);
  • 1″ knob of salted butter;
  • 1 tablespoon of pink peppercorns;
  • 1 tablespoon of capers;
  • 3 finely sliced cloves of garlic;
  • 4 tablespoons of double cream;
  • 6 button mushrooms cut in to quarters; and
  • A good pinch of sea salt and cracked black pepper.

Are you ready my friends? Here we go with Fried fish fillet with prawns, with a cream of mushroom sauce. As usual this will go quick, so keep up;

  1. In a pan add some olive oil and fry the peppercorns, mushrooms, garlic, fish fillet and prawns until the fish is golden brown, and the prawns are puffed up and nicely pink;
  2. Add in the butter, a pinch of sea salt, cracked black pepper, the capers and the cream and let that sauce reduce down over a low heat;
  3. Keep stirring gently so as not to break up the fish fillet;
  4. Once reduced by about a half you have finished.

On your serving dish carefully place the fillet so not to break and then arrange the prawns around it and drizzle the sauce over. You’ll see this in the photo. I tell you what, as a non-fish lover I think this looks pretty damned appetising. The family surely did like my Fried fish fillet with prawns, with a cream of mushroom sauce, and I am certain you will too – ENJOY!!!

I have been cooking since a small lad, as guided by my Nan and my Mum - gradually that morphed through exposure to Thai cooking from a lovely lady called Da in Margate. I used to hang out in her restaurant and watch the techniques. So the 1+1= greater than 2 occurred - Mum/Nan/Da - off I went in to the world of Asian cuisine. Moving to Asia in early 2000's clearly has brought that on somewhat - we travel continually, and eat locally and therefore have exposure to more and more new things. I have lived my dream and written a cook book whilst here, an amazing experience and all for a good cause too as I raised a lot of money for charity.
