Enough for 50 PAX so we were more than covered. It’s weird actually as the picture doesn’t do it justice: it is MASSIVE, and it has:

  • Masses of seating,
  • A serving table,
  • Hammocks,
  • A netted kid-safe swimming pool in the middle,
  • A BBQ pit,
  • A toilet,
  • Floaties and rubber rings,
  • Karaoke machine,
  • Diving boards, and importantly
  • Loads of life jackets.

I have a very good feeling that R1 Floating Cottage, Bohol, is going to be AWESOME fun for our family and friends. You all get towed out on another floating bamboo raft to spend the whole afternoon aboard the floating cottage. It’s anchored and very stable, so even good for those not so happy with the movement of the sea. It has just the most incredible 360-degree views: literally surrounding you. It’s quite an experience, and certainly an adventure.

Karaoke is out, kids are swimming, people are chillaxing, and the coals are getting hot. Heavenly. And, not a single iPad is in sight. What an absolute cracking day this was.

Here’s that netted swimming pool I mentioned, So all your little ones that can’t swim can have fun in the sea as well. One funny thing though as Jude was in the pool, was a rather inquisitive sea snake came to have a look. Emergency exit ensued haha. They’re pretty harmless despite being poisonous, because their fangs face backward, and their mouth is very small. Still, better safe than sorry.

ChillaxBBQ was supported today by our Kenneth: chief ‘fire-starter’ and food critic. I have to say he was awesome tasting every menu item and giving it an honest thumbs up for inclusion on the menu for the Resto-Bar that Wifey and me might be building on Panglao. BBQ’d Tanigue with Charred Pineapple

The English name for Tanigue is Spanish Mackerel, quite an oily fish but firm and perfect for BBQ. A special request was in from my Amy to cook this, as she referenced this as a favorite fish dish of hers. Your wish is granted, Amy.

This is such a simple recipe for Tanigue. I threw 5 Tanigue Fillets in a zip-lock bag, drizzled with Olive Oil, a really good pinch of sea salt and cracked Kampot black pepper, and about 4 Tbsp of fresh lime juice. Seal that up, give it a swish about, and in the fridge to marinade overnight.

When you’re ready to cook on the coals get the fish and wedges of fresh pineapple on the. Cook until nicely charred all over. The fish should take about 5-10 minutes on each side.

Korean-Style Sisig

Sisig is my favorite Filipino cuisine, I just love it. I have cooked Sisig many different times, in many different guises. This is the beauty of Sisig as there are so many variants of it, as you can read HERE.

The background to this is that there are many Korean tourists in Bohol now, so how about a Korean-Style Sisig, just for them at the resto-bar? That works, right?

Get a skillet pan on the BBQ grill, and fry off in some oil until slightly charring:

Once all cooked through add in 2 Tbsp of:

Cook through and then add in a jar of Kimchi and cook through until piping hot and all the flavors have muddled. Serve in the sizzling skillet with some Calamansi Limes. Oh man, this was quality. The family here for the day voted with their mouths and this was gone in the blink of an eye.

Chillax-Bar-BQ Signature BBQ Chicken Wings

These were beauties, like absolutely gorgeous chicken wings, and another must-have on the menu at Chillax-Bar-Bq. Quite simple to make as well, but you will need time. I had about 15 pieces of chicken wings. First of all, get them in a saucepan and add in:

  • A tin of coconut cream,
  • A tin of coconut milk,
  • 2 Tbsp of fish sauce, and
  • A good pinch of sea salt and cracked black pepper.

Get that on the heat, bring it to a boil, and reduce it to a simmer. Leave that gently bubbling for about an hour. You’re basically broiling the chicken wings. This will tenderize them, make them super juicy, and also cook them so you have no fear of raw chicken when you come to BBQ them. Drain and let them cool, and then into a good old zip-lock bag with:

  • A jar of green pesto – I was super lucky to be in Bohol, and used Bohol Bee Farm Green Pesto with Honey (killer),
  • Sea salt and cracked black pepper,
  • A drizzle of cooking oil,
  • 2-3 Tbsp of Chili flakes.

When it’s time get these bad boy chicken wings over the coals and get them to a nice char. Don’t forget these chicken wings are already cooked, so you are charring for flavor and to heat them up only. As soon as they’re charred chicken wings, you are rocking. And rocking these were. A must-have on the Chillax-Bar-Bq menu, that’s for certain. Chief taster, Kenneth, gave these a massive thumbs up too.

Special Chilli BBQ Prawns

OK, folks, it was zip-lock bag time again. Wash the prawns and then throw them in that zip-lock bag. Douse them with:

  • Cooking oil,
  • Sea salt and cracked black pepper,
  • Lime juice, and
  • Chili flakes.

Leave them overnight to marinate. When ready get those bad boys over the coals, turning occasionally until the prawns have puffed up and the shell has charred up nicely. I served these in a little bucket with another sprinkle of sea salt and a squirt of fresh lime. I like this one on the menu. Looks good when served too. Great bar snacks or family sharing. Love it.

BBQ Tuna Tataki

You’ll need to get a good sushi-grade block of Tuna. Pat it dry with some kitchen towel and then oil it all over with cooking oil. Mix some cracked black pepper, sea salt, and chili flakes in a bowl, and then coat the Tuna block with the dry rub.

When you’re ready to BBQ, pop the Tuna block on the Grill and cook for 1-2 minutes per side and turn immediately. You want to cook the Tuna block 1-2cm only on each side. Then thinly slice to show off the beautiful warmed inner sushi, with the slight charring all around. See the picture for how you want it to look. Yummo!!!

Filipino Sisig

Sisig really is my favorite Filipino cuisine, I just love it. So as well as the Korean-style variant above, I cooked a ‘normal’ Sisig (my version with what ingredients I had at the time).

BBQ Bullet Tuna Stuffed with Red Salsa

Tulingan or Bullet Tuna– is a saltwater fish with a bluish back turning to deep purple on the head. These are crackers for BBQing whole, just get your Filipino Wifey to de-gut these things. The Filipinos do it via the gills: amazing. So you can then grill these bad boys whole.

Red Salsa Recipe

Mix all of the following in a bowl and let it muddle for a few hours.

  • 2 sweet crunchy peppers chopped,
  • 8 chopped tomatoes,
  • 2 Tbsp White Vinegar,
  • 4 chopped Spring onions,
  • 2 chopped shallots,
  • 2 fresh limes’ juice,
  • Virgin olive oil, and
  • Sea salt and cracked black pepper.

Once you have gutted the Tuna, stuff in the Tuna fish cavity the following Red Salsa. Score the flesh and drizzle with oil all over, and a good sprinkle of sea salt and cracked black pepper. I used two skillet pans to act as an oven and baked the fish on the BBQ until cooked through – basically, Tuna‘s eyes will pop out.

Then I popped it straight onto the BBQ grill to crisp the skin and give it a good charred finish for flavor. Plate up and squeeze some fresh lime juice all over, and another sprinkle of sea salt and cracked black pepper. BOOMSKI!!! How good does that look? I served it up with some honey hot sauce from Bohol Bee Farm. Yummo!!!

As the sun set over the picturesque waters of Tagbilaran (post the monster rain storm), we all embarked on a culinary journey unlike any other aboard the R1 Floating Cottage. Nestled amidst the calm waves, this unique dining experience offered a delightful combination of mouthwatering flavors from ChillaxBBQ and an enchanting ambiance from the cool toonz wafting through the air.

One of the stars of the day was undoubtedly the ChillaxBBQ feast that awaited everyone on this floating haven. The skilled chefs at ChillaxBBQ worked with R1 Floating Cottage to showcase new menu items for Chillax-Bar-BQ RestoBar, The Home of the Kapre, by grilling a tantalizing array of meats and seafood, leaving everyone’s taste buds yearning for more. From succulent Sisigs including Korean-style, Tuna Tataki, and BBQd Red Salsa Stuffed Bullet Tuna, to juicy prawns charred to smoky perfection, each bite transported everyone to a realm of pure culinary delight.
