From the moment you step into its dramatic, high-ceilinged space adorned with leather chandeliers and a dry-aging cabinet that could make a butcher weep with joy, you know youโre in for something special.
The smokey aroma smacks you in the nostrils as soon as you walk in, and then youโll see the open kitchen, with its glowing parilla grill, sets the stage for a dining experience that you jusyt know is going to be food theatre as much as it will be a feast. And I wasnโt wrong stating thatโฆ

Wood-fired Bone Marrow, with Flatbread, Gremolata, Catalan Anchovies @ $22. Fatty and unctuous, I just canโt get enough of bone marrow these days, and this was a cracker, with additional saltiness from the achovies, ans smoke from the mesquiteโฆ Delish!!!

Beef Tartare, with Smoked Egg Yolk, Jerusalem Artichoke, Horseradish @ $22, I kid you not, folks, one of the very best tartare I have ever had. Melt-in-the-mouth, seasoned to perfection, slight sour from the capers and then KAPOW from the smoked egg and horseradish. Just incredible!!!
Bacon Fat Potato: Skirt Restaurant Review W Hotel Sentosa
Bacon Fat Potato, Potato Pavรฉ, Smoked Burrata, Jamรณn Ibรฉrico @ $24. Yet another WOW from Skirt. Just have a look at those ingredients, but then letโs deep-dry those off to crispy and then plate. The bite to have is a bit of everything โ I could swear I heard angels singing as I popped that in my gob. A truly wonderful dish, man oh man these Chefs are doing a great jobโฆ

Grilled Octopus, Sustainably Sourced, Raz El Hanout, Squid Ink Sauce, โNduja Aioli @ $42. Clearly, one for the Wifey. This pulpo dish did not win the accolade of best of the best, that still sits with Blu Kouzina Palawan Beach, on Sentosa funnily enoughโฆ But, she did love it, especially with the sauces. I tried the Nduja Aioli and that was killer: I believe with pork fatโฆย
Kurohana A5 Wagyu, Chuck Eye Steak: Skirt Restaurant Review W Hotel Sentosa
Kurohana A5 Wagyu, Chuck Eye Steak @ $168 for 250g. Yeah this was a stunner, perfectly cooked to medium-rare. Melt-in-the-mouth and intensely beefy. We needed some additional salt, but that is not a bad reflection on this most awesome hunk of Wagyu goodness. Iโd have like the tiniest bit of char, if I was going to be pickyโฆ
Skirt has teamed up with two remarkable beef producers: 1/ David Blackmore from Australia, yes the very steak that is used by Chef David Pynt at Burnt Ends. 2/ Kurohana A5 Wagyuย from Japan. Smoked Mashed Potatoes @ $15, and Charred Hispi Cabbage @ $18. I tell you, what an incredible pair of sides we chose this day. The mash, so silken and soft, with quality olive oil, and a smack of smoke from the mesquite. Sprinkle a little sea salt on this bad boy and it is heavenlyโฆ
Then, to the cabbage. I was stopped in my tracks by this. I love cabbage. Very much a growing up as a young lad raised by my grand-parents wirth an allotment. So when I come across an interesting cabbage dish, I am all-in. And this puppy was a sublime cracker!!! Slightly boiled, and then charred over the mesquite wood BBQ, add some onion sauce and croutons. I mean, damn, so good: WOOF!!!ย

Yes, I am even including their bread. Sublime. It had a crust on it like the bark of a tree. Massive crunch to it and again that whallop of smoke from the mesquite, and then to the butter. Mustard butter to be precise. Truly wonderful (note to Skirt: more butter next time pleaseโฆ). Oh man, this bread was so very very goodโฆ

And while the location in Sentosa Cove might be a bit of a trek for some, the tranquil marina views and the exceptional dining experience make it well worth the journey. Why not do like we did and make a night of it with a staycation, and the W Brunch at The Kitchen Table the next dayโฆ It was quality.

The team at SKIRT includes seasoned Beef Sommeliers (did you like what I did thereโฆ?) who take steak seriously โ and personally, you could say that the stakes are high hereโฆ These folks arenโt just here to plonk meat on a plate; theyโre all about crafting a beef experience thatโs as bespoke as your choice of wine.
Theyโll guide you through rare, premium cuts: the nose to tail, the cook, and even to letting you pick your own knife like youโre about to star in The Alamo. Theyโre also more than happy to chat about how Skirt brings in whole carcasses from top-notch producers across the globe, so what lands on your plate is nothing short of exceptional. Thanks to their know-how, youโll be tucking into cuts youโd be hard-pressed to find anywhere else: it literally can be nose to tail.
Even the knives in Skirt Restaurant are a stand out. I did say to our server that they might go one or two knives short at the end of service this day. Man alive these are just glorious.
