So wifey and BeBe have forayed today in to the world of catering, whilst leveraging the ChillaxBBQ brand. So a party of Filipinos, with food cooked by Mary and BeBe, hence the title today of PhillaxBeBeQ. I only did two dishes, my Thai fish and some whitebait deep fried in seasoned bread crumbs. The rest was done by wifey and BeBe, and a good looking turn out it was too. Apparently all the food disappeared, so proud to have the girls on the brand today. Well done.Looked amazing, with happy happy clients. Well done!

Mechavo, a classic Filipino dish. Beef with egg, looks bloody amazing.

Pancit, a traditional pork noodle dish that is served at pretty much every occasion where food is involved.

Malagkit, or Filipino sticky rice for desert.

I did a couple of Thai style baked fish, using Sea Bass this time. Apparently these were well received. I also did a home-made tartar sauce with these.

So truly our first ChillaxBBQ foray in to a more ‘catering style’ engagement with only a little being thrown on the BBQ itself for PhillaxBeBeQ. It’s now another string to the bow, to have us pre-cooking in the morning to deliver midday (as was the case today). Also it is the first time where we have had clients asking for specific food menu. And also today it was the first time we had none of the boys actually at an event to do the cooking. Apparently the ladies in the photos were asking where the Chefs were, ha ha! It went well. We hear good feedback so far. We even threw in a couple of bottles of wine to say thank you. ChillaxBBQ has expanded its capabilities – ENJOY!!!

Father of 3. All my kids are mixed, with English-Japanese, and English-Filipino - a recipe in the making there. I have been cooking since a small lad, as guided by my Nan and my Mum - gradually that morphed through exposure to Thai cooking from a lovely lady called Da in Margate. I used to hang out in her restaurant and watch the techniques. So the 1+1= greater than 2 occurred - Mum/Nan/Da - off I went in to the world of Asian cuisine. Moving to Asia in early 2000's clearly has brought that on somewhat - we travel continually, and eat locally and therefore have exposure to more and more new things. I have lived my dream and written a cook book whilst here, an amazing experience and all for a good cause too as I raised a lot of money for charity. My blog is now hopefully turning in to book number 2. Watch this space. I hope you enjoy my passion.
