ChillaxBBQ Stay@Home Recipes #34 – Smoked Salmon Soldiers
This was for Asian Mother’s Day brekkie 2020. Yes, it is #BillWallaceFriendly as made completely from what we had in the fridge, just add imagination. ChillaxBBQ Stay@Home Recipes #34 – Smoked Salmon Soldiers was borne from the fridge. I think they look stunning plated up and according to wifey AKA Mum they were bloody nice and wifey ate 2 whole slices of bread worth. Always a rather good sign.


For one Mum’s brekkie you will need;
- 2-3 slices of fresh smoked salmon
- 2 slices of bread – cut the crusts off
- A good knob of Ghee or salted butter
- Some thin slices of Avocado
- Half a fresh lemon – thinly sliced
- Sriracha Mayo
- 2 Cherry tomatoes thinly sliced
- Sea salt & cracked black pepper
- Thyme sprigs for garnish & a little flavour hit
Ready? Here we go, it’s as easy as 1, 2, 3…
- Fry off the bread in a pan with the Ghee or salted butter until it is nice and browned and crispy;
- Dab it with a kitchen towel to soak up any excess oil;
- Cut the bread into equal-sized ‘soldiers – I got 4 per slice;
- Get you hand torch out and flame the salmon to a char on one side – or a quick sizzle in the pan with the butter;
- Get your serving platter out;
- Lay some salmon down on each soldier;
- Give a little dollop of Sriracha mayo on the end of the salmon (see the photo);
- Lay a tomato slice on the other end;
- Pop an avocado slice on top of the tomato;
- Cut small lemon pieces away from the skin and pith and pop a little on the avocado;
- Pop you Thyme sprig on top and squeeze a little lemon juice all over and a good sprinkle of sea salt & cracked black pepper;
- Arrange nicely on your serving platter and wake up Mum.

How good was that? Pretty simple too right? All you are doing is cutting stuff up and frying some bread basically. But check the photo out. That is a little stunner of flavour explosions, texture and is seriously pleasing. on the eye too. Give it a crack for next Mother’s Day? Wtf really. I was kidding. Make it now. You’ve probably got stuff in the fridge you could use. Follow the 1, 2, 3 and have a crack. Mum was super-happy with her brekkie.
