Late lunch with Simon & Dani
I am rubbish you know.
Seriously not enough photos of our lovely late lunch today – should have had more group shots and the like, and clearly more of the food. But it sort of arrived and we ate it – ha ha! Seriously good fun, as we all helped try to clear the Xmas & Boxing Day fridge.
In attendance; Simon, Dani and boys x3, Granny Fae up from Australia, Dave & Jacqui and kids x2, Mary and I and kids x3 and remotely on Skype Craig & Katherine and kids x2. Lovely!!!
A major variety was served from cheeses, pates, amazing salads, beer bum chicken, sausages, fried rice, beers and wines, trifles, coconut ices – you name it – we had it. Truly delicious and great fun with kids going mad, us chatting and laughing – could not be better.
A couple of new things for me;
Bloke’s Salad
One which I foolishly did not photograph – duh!!!
Salad;
- 5 hard boiled eggs cut to quarters
- 1 packet of baby spinach
- 5 rashers of bacon fried until crisp and chopped to small pieces
- 1 pun net of finely clicked mushrooms
- 1/2 a packet of cleaned bean sprouts
Dressing (this is enough for 3-4 salads, so pop it in the fridge);
- 1 cup tomato ketchup
- 1 cup Worcestershire sauce
- 1/2 cup brown sugar
- 1/c cup malt vinegar
- 1 cup of olive oil
- good pinch of salt & pepper
Halumi Cheese
Now here is a new one and no recipe needed as it so simple but truly so bloody effective.
Halumi cheese cut in to oblongs, and placed in a tupperware box. As you lay it in sprinkle some rosemary on top of each layer and drizzle olive oil. Store it in the fridge for a day or so to marinate and you are done.
Then as my great mate Simon shows off cook it up on your BBQ to get those lovely lines across the cheese. Serve hot hot hot!!!
Granny Fae’s Xmas Sushi
Just had to show this as it looks so bloody beautiful does it not.
Almost like sushi Xmas tree with all the colours and almost bauble-like ingredients.
