What you’ll need for 10-15 spoons;

  • 1 punnet of sweet cherry tomatoes – cut them into half;
  • 1 packet of roughly chopped sweet/or holy basil;
  • 1 mozzarella cheese ball cut into small cubes;
  • Balsamic vinegar (up the ante to good quality);
  • Olive oil (again make it good quality); and
  • Pinch of sea salt and cracked black pepper.

In a bowl add the tomatoes, basil, cheese, and then drizzle over a couple of good plugs of Balsamic and Olive oil. Sprinkle a good pinch of salt and black pepper. Stir this through and serve on Asia soup spoons as per the picture. Stand back and listen to the slurping.

Damn this is really good. It’s a really nice little starter dish. It looks ace too with all the colours, and you get a great smell, and kick taste with this.
