Tomato, mozzarella and basil stackers
Here she blows. Using my stacker rings to great effect yesterday at another Rutherford and Kennett BBQ. And this was one of the dishes and what a cracker she was too. Looked amazing, tasted sublime – yep this one was well worth it and so easy.

As you may have seen before in previous blogs I have made salads before with mozzarella, tomato, balsamic etc. But today an idea popped in my head as I was preparing for an impromptu BBQ with the Rutherfords. In my hand I had some tomato, mozzarella, basil & my stacking rings. I know I’ll do a salad, but let’s stack the salad using using my rings. Therein was created tomato, mozzarella, basil stackers

A vertical tomato, mozzarella, basil stackers salad – pretty damn impressive I think.

You will ultimately need food stacking rings or something equivalent – or you could even try this with a very steady hand.

Go on give it a go.

You will need the following ingredients – basically add more if you want more individual servings:

  • 10 tomatoes thinly sliced;
  • 1 packets of sweet basil;
  • 3 packets of buffalo mozzarella thinly sliced;
  • 1 bottle of good quality Balsamic vinegar;
  • Olive oil; and
  • Salt and cracked black pepper.

So flipping easy, so impressive, and the taste…

Well that my friends is over to you to decide…

In the stacker ring goes;

  1. Sliced tomato;
  2. Slice of cheese;
  3. Couple of ripped basil leaves;
  4. Sliced tomato;
  5. Slice of cheese;
  6. Couple of ripped basil leaves;
  7. Slice of tomato;
  8. A little basil leaf;
  9. Remove the stacker ring;
  10. A drizzle of olive oil;
  11. A drizzle of Balsamic vinegar;
  12. A sprinkle of salt and pepper.

That is it.

I have to admit I do like my tomatoes a little saltier, so of course I add more salt.

So again the principals of my cooking apply. If you like something more as an ingredient, well go ahead and add more. Have a taste. If it works you – change the recipe and make it yours.

Try it. Make your own tomato, mozzarella, basil stackers.

I served on a serving platter – about 4 at a time.

They truly did look amazing.

They all disappeared, so must have been good.

I have to admit – bloody good!

Moving to Asia in early 2000's clearly has brought that on somewhat - we travel continually, and eat locally and therefore have exposure to more and more new things. I have lived my dream and written a cook book whilst here, an amazing experience and all for a good cause too as I raised a lot of money for charity.
