Asian Breakfast Muffins In Minutes

How lazy are you feeling at breakfast these days? Want something that is super fast, super impressive, super tasty, and good for all the family? Well if you do my friends, then this is the one for you. Here will follow my recipe for Asian Breakfast Muffins In Minutes. These are damn fine. I just want to emphasise again how simple these are to make. How about breakfast, prepared, cooked and served in less than 10 minutes for a family of 5. Yep. It’s true. Read on.

Bit of a blink and you’ll miss it recipe this. You ready? Pay attention now! This will make 5 muffins, which was enough for the entire Semi-Naked Chef family to eat Asian Breakfast Muffins In Minutes.

In to a bowl add the following;

  • 250g self-raising flour;
  • 1 teaspoon of bicarbonate of soda;
  • A glug of olive oil;
  • 2 eggs;
  • 100ml of cold milk; and
  • A good pinch of sea salt and cracked black pepper.

Mix it thoroughly. No lumps please. It should form a nice, smooth, silky, batter like mixture. If too thick add a little more milk. It should not be like water, but like a nice smooth batter.

Now I sent savoury for these Asian Breakfast Muffins In Minutes. Well it was breakfast. But pretty much you can add in whatever the hell you want now. Fruit, chocolate chunks, pretty much anything. Maybe lose the salt & pepper though if you are going down the sweet avenue.

But my Asian Breakfast Muffins In Minutes today were savoury. So in to the mix you now add;

  • 4 finely chopped and fried to crispy, pieces of streaky bacon;
  • 5-6 thinly sliced pieces of roast pork belly, that I then cut in half again (yep the Asian twist);
  • A teaspoon of finely chopped garlic;
  • A handful of grated cheese; and if you wanted
  • A finely chopped chili padi.

Give this a gentle mix. The take 5 mugs, yep the drinking kind, and spoon in the mix equally. Make sure you get an equal portion of the cheese, bacon and pork belly per cup too. That’s it folks you are finished my Asian Breakfast Muffins In Minutes. Hold on a minute, how to cook it?

In the microwave for 2-3 minutes. Until the mix has risen in the mugs, and looks like the picture. 2-3 minutes TOPS though, please keep an eye as this can burn in seconds. Now you can remove from the mug as Mary did, but I liked simply serving it cup and all.

So there you have it my friends. Asian Breakfast Muffins In Minutes. I mean come on, if you can’t cook that you shouldn’t be allowed anywhere near a kitchen. Again, just watch the cook time as this can burn super fast, 2 minutes is likely more than enough, it depends a little on the microwave power you have. But give these a go, bloody brilliant in my reckoning – ENJOY!!!

I have been cooking since a small lad, as guided by my Nan and my Mum - gradually that morphed through exposure to Thai cooking from a lovely lady called Da in Margate. I used to hang out in her restaurant and watch the techniques. So the 1+1= greater than 2 occurred - Mum/Nan/Da - off I went in to the world of Asian cuisine. Moving to Asia in early 2000's clearly has brought that on somewhat - we travel continually, and eat locally and therefore have exposure to more and more new things. I have lived my dream and written a cook book whilst here, an amazing experience and all for a good cause too as I raised a lot of money for charity.
