And the very next day after an emergency wash and clean at midnight I was back to the shops to top up on the ingredients and supplies for Wedding Anniversary party #2 for the same client. This time 5 PAX as they were off-site and I was employed as a member of the crew to be allowed on due to Covid numbers. 

What fun. And incredible catamaran yacht with an outdoor BBQ (that was broken) and pouring rain pretty much all day. It did not deter the client so it does not deter ChillaxBBQ. I changed the running order and cooked about 70% of the dishes in the galley kitchen due to the rain. And it came out all rather special. I had a blast and I think the client did too from the review I got.

Another amazing review; “Brian had a tough job on our boat trip as the number limits meant he had to do everything in his own. To make matters worse, it rained for most of the trip so the bbq was out of use for a lot of the time. Despite the setbacks, Brian pulled it all out of the bag with a non-stop food fest. 

The honey herb pork cubes were amazing, as were the rice/beef/horseradish bites. Chilli prawns, coconut chicken wings, steak… all of it delicious. After each course, we declared how full we were and couldn’t eat more….until the next course came out and we always found space to fit it in! Couldn’t fault a thing and it made our day extra special”

The rain did not stop play, it just moved me indoors. A little cramped and airless but needs must. Some pretty good stuff was thrown out from this wee galley kitchen, even if I say so myself.

As everyone is sitting undercover, next up was the cheese fondue served with delicious toasted and salted sourdough. Amazing fondue but so very filling. Again done on the hob as pouring a big one outside.

This was a beauty – sadly again done in a pan on the hob due to the weather. These are two-bite hanger steak sushi ‘w’ horseradish cream. Oh yes, these are crazy good!!!

Another sit-down experience with our signature Lump Crab & Egg Stacker ‘w’ burnt butter, citrus pepper mayo, fish roe and beetroot crunch.

The ChillaxBBQ take on Fish ‘n’ Chips – 4 fresh herbs & citrus baked fish on top of salt ‘n’ vinegar chips. Bloody good.

Toma up next – very tough to cook on the BBQ as it was only able to be set to NAPALM – yep the BBQ was broken – OMG. Not brilliant, especially after what the happy couple had paid for this yacht. Muddled through it though and she ended up nicely pink to pink but with a crust a little too charred for my liking. I cannot blame the tools, it was me. Still, I tried some and it was banging delicious so still happy with the outcome!

Coconut cream chilli chicken wings up next – and again done on the BBQ itself whoop whoop. I had already poached these for 2 hours in coconut cream at 90 degrees so perfectly cooked – it’s just charring & warming time and getting that punch of chilli flake on there too. Hell yeah!!!

Even a quirky little dessert today – marshmallows ‘w’ honey & chilli flakes. Yes, you heard right.

Yep, bloody brilliant (in my personal reckoning). Look great. Sugar overload. Slap in the gob chilli. Trinity. I love it.

And that was that, 2-8pm and cooking for 5 of the 6 hours. Adapting to the weather issues. Changing a running order around. Serving up some pretty good dishes I am proud of. The review says it all for me. I procured the most amazing produce again today from my BFF’s at The Cheese Shop & Orca. It sort of makes the job easier if you have quality ingredients, so I can’t thank them enough. If you want someone to cook for your celebrations give me a bell – ENJOY!!!
