Baked Dorey in Herb Butter with Rosemary & Lemon


I have 4Kg of Dorey fillets which are amazing fish fillets. So fresh, not. fishy at all and a lovely firm fish too. So very versatile for cooking with. I bought a ton from one of our partners for some personal consumption and two ChillaxBBQs. Of course, both the ChillaxBBQs were cancelled so we have a fish mountain in the freezer to use and my job is to make that happen. So today I used up two of these beautiful dorey fillets. If anyone is interested have a look on-line at SS Kim for superb frozen fish and shellfish. SUPER cheap too. Herb Butter Baked Dorey  is super easy. Follow the below and there you go…
No need for a recipe list as it really is so easy – just follow this;
  • 2 Dorey fillets – give them a little rinse under fresh-water and then pat dry
  • Pop some silver foil in a baking tray and lay the fillets down
  • Drizzle all over with some Olive Oil and give a good sprinkle of sea salt & cracked black pepper
  • Lay on some sprigs of fresh Rosemary
  • Slice a fresh lemon and get those slices on top of the Rosemary
  • Finally spread a little herbed butter on the top
  • Pop that into an oven at 180 for about 20 minutes until the fish is all cooked through
  • It will still be super moist because of the herbed butter that will melt and poach from the underside
Baked Dorey
Carefully pick up the fillets using a fish slice, allowing some of the excess butter to drain off. Pop them on your serving platter as above and serve away all in one. Looks stunning, and tastes the same. I even tried some of this and WOW!!! Not fishy, just super savoury and citrus with little hints of Rosemary popping through. QUALITY!!!

A cracker of a little dish that would take you about 30 minutes to prep and cook and about 2 seconds to eat. Give it a go.
