Avocado, strawberry, basil and chili salad

Yes indeed it’s another weird recipe from me. One that will probably have you thinking WTF, how do they all go well together. But boy oh boy do they, this is an amazing salad that you must try. Its very simple, its very effective, it looks great and tastes incredible. Here comes my Avocado, strawberry, basil and chili salad.

You have to be kidding me Kennett, er nope try it and all shall be revealed…

Stick with me my friends. Follow the recipe. When you serve this up you’ll likely get looks of curiosity and wonder, but then delight once they tuck in. It is an absolute belter. Its an adaptation from an idea my mother-in-law, Mizuyo, gave me from a meal she had enjoyed at her friends house in London. This is my Avocado, strawberry, basil and chili salad.

For a salad to feed 4 you will need;

  • 3 avocados, with stone taken out. Remove the soft flesh from the skins and slice thinly;
  • 1 punnet of strawberries. Cut off the top and cut in half;
  • Half a cup or so of freshly shaved parmesan cheese;
  • Half a cup of ripped Thai basil leaves – or normal basil;
  • 4 finely chopped shallots;
  • 1 finely sliced jalapeño pepper; and
  • 1 packet of prosciutto or other cured ham. Chop this in to strips and fry until crispy and curled up.

This just so easy. Throw all the above in a serving bowl. Phase I of Avocado, strawberry, basil and chili salad is complete. Now all we need is a decent dressing to accompany it;

  • 4 tablespoons olive oil;
  • 4 tablespoons balsamic vinegar;
  • 2 tablespoons lemon juice;
  • 1-2 tablespoons of sugar;
  • 1 tablespoon salt; and
  • A very good pinch of cracked black pepper.

Stir this up and then pour over the salad in the bowl. Give that a good toss, and then plate her up for eating time! It looks amazing, doesn’t it, with all those colours and textures? Then try eating it. It’s like party poppers going off in your mouth. Sweet, sour, hot, salty, basily – AMAZING! Seriously give this one a go and see the faces before and after. This is a cracking salad. That was my Avocado, strawberry, basil and chili salad – ENJOY!!!

Father of 3. All my kids are mixed, with English-Japanese, and English-Filipino - a recipe in the making there. I have been cooking since a small lad, as guided by my Nan and my Mum - gradually that morphed through exposure to Thai cooking from a lovely lady called Da in Margate. I used to hang out in her restaurant and watch the techniques. So the 1+1= greater than 2 occurred - Mum/Nan/Da - off I went in to the world of Asian cuisine. Moving to Asia in early 2000's clearly has brought that on somewhat - we travel continually, and eat locally and therefore have exposure to more and more new things. I have lived my dream and written a cook book whilst here, an amazing experience and all for a good cause too as I raised a lot of money for charity.
