Pig Eggs – Amy’s choice

Drifting away from Asia for a while.

Try this one. Very simple. In fact SO very simple. But very effective.

I made enough here for 5 of us. Various phases to follow. Let’s keep it simple.

Phase I – the eggs

  • 5 eggs cracked in to 5 individual mannequins or serving cups as I did
  • 2 teaspoons of sour cream added in to the egg
  • A good pinch of salt and pepper in to the egg and sour cream mix

Take a deep baking tray and fill with water to about half. Pop this on the hob and bring the water to a boil. Place in your mannequins or cups and let them boil away until the egg is nicely cooked through. Literally in their own little bath.

I gave one little stir to mix the egg with the sour cream.

Phase II – Bread and Pig

  • 1 ciabatta loaf sliced in to 1/2 inch slices
  • 2 packs of Iberico cured ham
  • 2 garlic cloves
  • Salt
  • Good glug of Olive oil

Get the oven on at 250.

Lay the sliced bread of a baking tray and drizzle with Olive oil. Give them a light sprinkle of salt and whack them in the oven.

Leave the bread pieces in there for about 20 minutes until browned and crispy. Take the garlic cloves and rub them on the toasted bread. This should act like a grater leaving a nice layer of thin garlic over the bread surface.

Put on some ham – thick as you like.

Serve away. Yep as simple as that.

Really really nice is this one – definitely a recommendation. Looks good, tastes good, so flipping easy. Try it!

I used to hang out in her restaurant and watch the techniques. So the 1+1= greater than 2 occurred - Mum/Nan/Da - off I went in to the world of Asian cuisine. Moving to Asia in early 2000's clearly has brought that on somewhat - we travel continually, and eat locally and therefore have exposure to more and more new things. I have lived my dream and written a cook book whilst here, an amazing experience and all for a good cause too as I raised a lot of money for charity. My blog is now hopefully turning in to book number 2. Watch this space. I hope you enjoy my passion.
