Baked Scallops with Ponzu, Breadcrumbs, and Lime: a brilliant recipe for you

Baked scallops: of course, whilst I am home I have to cook for the Wifey too, and #1. Yeah, both of those two are ‘fishy’ lovers. My Piscatorial family members. So they, occasionally, get their very own special from the menu. That day and today was a day just like that. Due to a Covid-19 canceled ChillaxBBQ, I had some scallops in the freezer.

Yeap, that’ll do. And today those scallops turned into:

Baked Scallops ‘w’ Ponzu, Breadcrumbs & Lime

Baked Scallops
Keep them in the shell and pop them into a baking tray and give a drizzle with some Japanese Ponzu dressing, a squirt of fresh Lime Juice, and a good sprinkle of sea salt & cracked black pepper. Leave to marinate in the fridge, as in the picture, for a couple of hours if you can.

Pop the baking tray into the oven, when you are ready, at 180, and bake them for about 10 minutes. Bring them out and drain off any remaining liquid. Dust them with bread crumbs and pop them back in the oven until the bread crumbs have browned off and crisped up. Like the picture below. About another 5-10 minutes is more than enough.

Plate them on a plank, still in the shells. Drizzle a little more fresh Ponzu Dressing into the shell and drizzle some fresh Lime Juice all over. Pop a little spring of something green on top of each scallop to finish it off and make it look all Chef-like – I used some Thyme. Serve away, my friends.

All from the freezer and fridge with no special order-in needed either. Feedback from Wifey & #1 was that it was really good, so good I didn’t even see them eat them. They literally did disappear.

Wifey said; “Nice!” and even stretched to say “Yummy!” That’s like receiving a Michelin *, believe me. So have a go guys. Super-easy and super-delicious and can easily be done in the comfort of your own home kitchen. Go on, do it for the family.

Another Baked Scallops recipe, just for you...

Baked scallops are a delicious seafood dish made from scallop mollusks that have been cooked in an oven. They are typically prepared with a variety of seasonings and accompaniments to enhance their flavor. Here’s a basic recipe for baked scallops:

Ingredients:

  • Fresh scallops (about 1 kg)
  • Olive oil
  • Lemon juice
  • Garlic (minced)
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or thyme)
  • Breadcrumbs (optional)
  • Parmesan cheese (grated, optional)
  • Butter (optional)

 

Instructions:

  1. Preheat your oven to around 190°C

  2. Rinse the scallops under cold water and pat them dry with paper towels. This helps remove excess moisture, allowing the scallops to brown nicely in the oven.

  3. In a mixing bowl, combine olive oil, minced garlic, lemon juice, salt, and pepper. Mix well to create a marinade.

  4. Add the scallops to the marinade and gently toss them to coat evenly. Allow the scallops to marinate for about 15-20 minutes, but avoid marinating them for too long as the acidity from the lemon juice can start to “cook” the scallops.

  5. Prepare a baking dish by greasing it lightly with olive oil or butter.

  6. Arrange the marinated scallops in a single layer in the baking dish. Make sure they are not too crowded to ensure even cooking.

  7. If desired, you can sprinkle breadcrumbs over the scallops to create a crispy topping. Grated Parmesan cheese can also be added for extra flavor.

  8. If using breadcrumbs and cheese, consider placing small dabs of butter on top of the scallops to help with browning and flavor.

  9. Bake the scallops in the preheated oven for about 12-15 minutes, or until they are opaque and have a slightly golden-brown color on the top.

  10. Once the scallops are cooked, remove them from the oven. Garnish with fresh herbs like parsley or thyme for a burst of color and added flavor.

  11. Serve the baked scallops hot as an appetizer or main course. They can be accompanied by sides like steamed vegetables, rice, or a fresh salad.
