When Daddy has an hour break in his work calls to Europe over the dinner timeframe, it becomes Daddy is cooking dinner time. I had this absolute belter of a T-bone in the freezer along with some Ozzie Scampi from my BFF Shaun @ Orca.

These Scampi are like Langoustines, but with massive heads. My wifey is a lover of any shellfish head-fat so a rather large double-bonus right there. So time to create a rather nice roast dinner tonight for the family. I’ll give the recipe beneath the pictures, as they are so so easy.

We dined like Kings, Queens, Princes and Princesses tonight. Absolutely and superbly delicious.

Sadly I did have to cremate some steak for Wifey & Strawberry Blonde, but Jude Jude, #1 and I ate it as it should be eaten – perfect medium-rare…

Have a look at those bad boys. Quite punchy on the old $$$ though and not a lot of tail meat as the weight is in the head. But my saving grace is that Wifey loves head fat of prawns, crabs and lobster so for her this is a bonus… Brownie Points were galore!!!

Brussels ‘w’ Bacon, Butter & Honey. Clean the Sprouts and boil them to soft in salted water. In they go to a wok and fry them off with lardons/bacon bits, 3 Tbsp of honey (yes honey), a good knob or two of salted butter and 2 good pinches of sea salt & cracked black pepper. Beauties!!!

Double yummo roast spuds with Olive Oil. So, so good. Skins on for maximum flavour, just give them a quick rub with a new scouring pad to remove any dirt. Cut to 4 and boil in a pot with salted water until par-soft. As in when you stick a fork in there is no ‘resistance’. Drain and in a roasting tin. Drizzle with your best Olive Oil and season well with sea salt & cracked black pepper. Pop in an oven at 200 degrees until nicely browned and crisping. Pop in a bowl, drizzle over the hot Olive Oil for super flavouring and give another sprinkle of sea salt. Seriously do very good.
Australian Scampis BBQ
Here’s the Ozzie Scampy all cooked and ready to eat. Rinse them first in clean water, Stick a sharp knife in the head and cut down lengthways – this will split them in half. Drizzle with Olive Oil, a good squeeze of lemon, a dusting of smoked paprika, a slither of butter on each half, and a sprinkle of sea salt & cracked black pepper. In the same oven at 200 for about 10 minutes until puffed up and white. Serve with another squeeze of lemon juice. How great do those bad boys look? So very delicious, I promise you. Ooohs and Ahhhs from the family.
Wagyu T-Bone Steak
Be still my aching heart. Well, it will be aching even more after eating this. An absolute stunner of a monster T-Bone. All it had was sea salt & cracked Kampot black pepper all over. Allow it to come to room temperature to assist with even cooking. In a skillet pan (no oil needed) for 5 or so minutes per side until charred and off to rest for 5. That’s literally it. Carve her up and sprinkle with a little more sea salt. Enjoy that beauty!!!
T-bone Wagyu Steak
Well hello there!!! Perfect medium-rare on the Sirloin. She’s a beauty alright. Flavours to die for and so juicy and buttery. Notice not much juice leakage due to the resting, which means the juice is still in the meat hence superbly tender and juicy steak. Man oh, man!!!

Yeah, really not sure if the family liked the steak though. What do you think? Wifey actually went caveman on this – she loves those charred bits.
