What fantastic birthday party this was. 80’s themed for our mates Luke and Caroline, The Archers. Bless them, they decided to use our services, so we went way overboard. Had massive fun doing to do, but also being part of the party. We did our third ChillaxBBQ Chili Challenge. I fell in her pool fully clothed. Verbal punch up with one punter (a first). About 6 new dishes. Met heaps of such wonderful new friends (hopefully). So this is ChillaxBBQ @ The Archer’s. Can’t thank you enough Luke and Caroline – happy birthday on 10th my lovelies, let us know where you’ll be whetting your whistle – beers on us.

Here’s a new on for ChillaxBBQ. Moroccan style fish with cinnamon sugar caramel, cranberries and Macadamia nut dip. DOUBLE BOOM!

Like beef butter this was, truly melt-in-mouth. Sea salt, cracked black pepper and a little Olive oil is all we add – oh OK and some little sprinkling of chili flakes.

Here’s another new one. Flank steak, mustard crusted, and stuffed with pork fat, thyme, Dijon mustard and garlic. Slow roasted, and then charred on the BBQ.

Guests starting to arrive. Some major peaks and toughs. We kicked off at 1700, and then a MAJOR spike about 1900 for rest of night. Boom!

Be still my aching heart, just amazing. The Cheese Shop, Joo Chiat Road, be proud my friends this was yet again an absolute CRACKER that everyone loved. We did a second version with the Iberico Chorizo too. BOOM!!!!

Our new Tomahawks from our new mates at alternative.sg – these were absolutely cracking. Slow roast for 3 hours on 90, and then charred on the BBQ. Seriously good meat. Loving our new relationship!

Here’s another new one for us, Thai Style Snapper, with home made Tarter sauce. This absolutely disappeared from the platter, almost could be called flying fish?

Our new chicken satay dish, made by my lovely wife. We are now making chicken presto satay skewers. Again these made a killing, with all 2Kg disappearing so so quickly.

We had such fun today. I think this could be our best yet. Many new recipes were tried out to great success.
