BUTTER CORIANDER PRAWNS BY THE SEMI-NAKED CHEF

Oh boy these were so so yummy. Look at them, you want to eat them right. Very nice dish this one, again so very simple but so very effective.

Get your zip lock bags out folks.

No need to list this as it is so flipping simple to be honest.

Throw in the bag about 20 whole prawns, about half a pack of butter that is soft enough to massage, two bunches of chopped coriander, salt and pepper and 2 tablespoons of lime juice.

Seriously that’s it. Zip up the bag and move the prawns around so they all get nicely coated. Try to leave these marinating for abut 1-2 hours. Sadly I was a little late as was sat down the hawker having a beer, so mine only got about 45 minutes, but still they turned out really nice.

When you are ready whack them on the BBQ – you don’t need to keep touching and turning, just literally when they turn nice and pink and maybe a little charred, spin em over and repeat. And you are done.

This lot disappeared in the blink of an eye – so I assume they were good – Ollie just confirmed yes they were.

I have been cooking since a small lad, as guided by my Nan and my Mum - gradually that morphed through exposure to Thai cooking from a lovely lady called Da in Margate. I used to hang out in her restaurant and watch the techniques. So the 1+1= greater than 2 occurred - Mum/Nan/Da - off I went in to the world of Asian cuisine. Moving to Asia in early 2000's clearly has brought that on somewhat - we travel continually, and eat locally and therefore have exposure to more and more new things. I have lived my dream and written a cook book whilst here, an amazing experience and all for a good cause too as I raised a lot of money for charity. My blog is now hopefully turning in to book number 2. Watch this space. I hope you enjoy my passion.
