Butter Coriander Prawns is a recipe that needs no list as it is so flipping simple, to be honest.
Here we go, the start of Butter Coriander Prawns: Throw in the bag about 20 whole prawns, about half a pack of butter that is soft enough to massage, two bunches of chopped coriander, salt and pepper, and 2 tablespoons of lime juice.
Seriously that’s it, that’s all you need to do for Butter Coriander Prawns. Zip up the bag and move the prawns around so they all get nicely coated. Try to leave this marinating for about 1-2 hours. Sadly I was a little late as was sat down at the hawker having a beer, so mine only got about 45 minutes, but still, Butter Coriander Prawns turned out really nice.
When you are ready whack the prawns on the BBQ – you don’t need to keep touching and turning, just literally when the prawns turn nice and pink and maybe a little charred, spin them over and repeat. And you are done.
This lot disappeared in the blink of an eye – so I assume they were good – Ollie just confirmed yes they were. I saw one other pretty good recipe from Dairy Farmers of Canada of all people, who also use some lime in the mix. Nice touch. Hey, make it yours, it’s just a guideline.
