ChillaxBBQ Stay@Home Recipes: Beef, Bacon & Cheese Pasta Bake

You know something like ‘Aged’ chilli-con Carne with watercress, tinned peaches over a bed of pot noodles!”
So here is a special just for you Bill. Here is ChillaxBBQ Stay@Home Recipes #6, AKA Bill Wallace’s Beef, Bacon & Cheese Pasta Bake.
I did this for Jude Jude’s dinner last night to use what was in the cupboard and to use the beef leftovers from the 9-hour roast I did the other day.
Does this meet your stringent criteria, my friend? Don’t forget we are in house lockdown and cannot leave the front door so everything created, cooked, and shared as a new recipe, is made from what I have at home. This is how ChillaxBBQ Stay@Home Recipes #6 came about yesterday evening.
“I am Bill Wallace. And I see a whole army of ingredients in my fridge and cupboard, here in defiance of Covid-19! I have come to cook as a free man. And a free man I am! What will you do without freedom? Will you cook?!” said Bill.
I cut some leftover beef into small pieces, finely chopped some white onion and garlic, and snipped a couple of streaky bacon rashers into small pieces with scissors.
Take your best pan and fry all this off with a knob of butter and a good pinch of sea salt and cracked black pepper. Off the heat when nicely browned and set aside. The above is enough for 1-2 people.
I had a starving 6-year-old shouting at me so I also resorted to a little help from my friend the hand-torch to assist with the browning up of the cheese. You really don’t need it though, just leave it in the oven until it does the same thing.
And there she is finished folks. I served the pasta on a platter straight from the baking tray. Too easy, bloody delicious, and good for kids or adults. We all got stuck into this despite Jude Jude trying to stab us with his fork. Great way to empty some space in the fridge and cupboard and to use those leftovers. Bloody nice.
