Of course, whilst I am home I have to cook for the Wifey too, and #1. Yeah, both those two are the ‘fishy’ lovers. My Piscatorial family members. So they, occasionally, get their very own special from the menu. That day and today was a day just like that. Due to a Covid-19 cancelled ChillaxBBQ, I had some scallops in the freezer. Yeap, that’ll do. And today those scallops turned into ChillaxBBQ Stay@Home Recipes #9. Also known as;

Baked Scallops ‘w’ Ponzu, Breadcrumbs & Lime

Baked Scallops
Keep them in the shell and pop them into a baking tray and give a drizzle with some Japanese Ponzu dressing, a squirt of fresh Lime Juice and a good sprinkle of sea salt & cracked black pepper. Leave to marinate in the fridge, as in the picture, for a couple of hours if you can.

Pop the baking tray into the oven, when you are ready, at 180 and bake them for about 10 minutes. Bring them out and drain off any remaining liquid. Dust them with bread crumbs and pop them back in the oven until the bread crumbs have browned off and crisped up. Like the picture below. About another 5-10 minutes is more than enough.

Plate them on a plank, still in the shells. Drizzle a little more fresh Ponzu Dressing into the shell and drizzle with some fresh Lime Juice all over. Pop a little spring of something green on top of each scallop to finish it off and make it look all Chef-like – I used some Thyme. Serve away, my friends.

All from the freezer and fridge with no special order-in needed either. Feedback from Wifey & #1 was that it was really good, so good I didn’t even see them eat them. They literally did disappear. Wifey said; “Nice!” and even stretched to say “Yummy!” That’s like receiving a Michelin *, believe me. So have a go guys. Super-easy and super-delicious and can easily be done in the comfort of your own home kitchen. Go on, do it for the family.
