Of course, whilst I am home I have to cook for the Wifey too, and #1. Yeah, both those two are the ‘fishy’ lovers. My Piscatorial family members. So they, occasionally, get their very own special from the menu. That day and today was a day just like that. Due to a Covid-19 cancelled ChillaxBBQ, I had some scallops in the freezer. Yeap, that’ll do. And today those scallops turned into ChillaxBBQ Stay@Home Recipes #9. Also known as;
Baked Scallops ‘w’ Ponzu, Breadcrumbs & Lime
Pop the baking tray into the oven, when you are ready, at 180 and bake them for about 10 minutes. Bring them out and drain off any remaining liquid. Dust them with bread crumbs and pop them back in the oven until the bread crumbs have browned off and crisped up. Like the picture below. About another 5-10 minutes is more than enough.

All from the freezer and fridge with no special order-in needed either. Feedback from Wifey & #1 was that it was really good, so good I didn’t even see them eat them. They literally did disappear. Wifey said; “Nice!” and even stretched to say “Yummy!” That’s like receiving a Michelin *, believe me. So have a go guys. Super-easy and super-delicious and can easily be done in the comfort of your own home kitchen. Go on, do it for the family.
