Smoked salmon x2, and some laab gai with some stuff

Amy birthday party – some adult food!!!

Adult food though, not the kidlets. Real easy, real quick, really nice!!!

Smoked salmon - hmm yes indeed clearly out of my comfort zone, but hey 40+ guests, someone has to like it...

Not in my usual style, so no real recipe format just a brief description.

Take a pack or two of smoked salmon, and cut to bite sized pieces. Arrange on a serving platter. Drizzle with some lemon juice. Scatter some finely sliced onion on top, also scatter some capers. Take a little mayonnaise and add in some wasabi – hey presto wasabi cream. Drizzle that on top and serve away. Looks quite nice doesn’t it. Apparently very tasty.

Even simpler this one.

Same as before – smoked salmon, slice to bite sized pieces, squeeze on some lemon juice and sprinkle over some pickled pink peppercorns.

Apparently a winner with many comments coming back, and an empty plate after the party.

Take a big pot, add in cold water, 4 flank steaks, 8 star anise, 8  cloves, a cup of soy sauce. Bring to the boil. Reduce to a simmer. Let that sit for about 3 hours to break down the meat and make it ever so tender. Drain. Strip in to strips as you can see above and plate.

I served this with a dip of. Cup water, Cup soy sauce, Cup fish sauce, Cup lemon juice, 2 finely sliced chili padi, handful of chopped coriander.

Boom – winner winner!!!

Laab – but a tad different to my usual

No recipe for this as you can visit my Thai section and grab the laab recipe there.

But basically slightly different in that;

Replace the toasted chili powder with smoky paprika.

Lose the toasted rice.

Serve with lettuce leaves to use as ‘spoons’

This was flipping delicious, seriously!

I have been cooking since a small lad, as guided by my Nan and my Mum - gradually that morphed through exposure to Thai cooking from a lovely lady called Da in Margate. I used to hang out in her restaurant and watch the techniques. So the 1+1= greater than 2 occurred - Mum/Nan/Da - off I went in to the world of Asian cuisine. Moving to Asia in early 2000's clearly has brought that on somewhat - we travel continually, and eat locally and therefore have exposure to more and more new things. I have lived my dream and written a cook book whilst here, an amazing experience and all for a good cause too as I raised a lot of money for charity. My blog is now hopefully turning in to book number 2. Watch this space. I hope you enjoy my passion.
