SUSHISAMBA Singapore Review: Where Japanese, Brazilian, and Peruvian Flavours Samba to the DJ Beat

SUSHISAMBA SINGAPORE REVIEW: Let’s be honest: Singapore has plenty of restaurants promising a “fusion concept,” but many of them just have all the cross-cultural chemistry of an awkward and embarrassing mixed culture family wedding.

But then enters SUSHISAMBA Singapore, the sort of spot that turns up the style, spices up the sushi, and—yes—actually throws in samba dancers just when you think your double toro couldn’t get any brighter. Atop Capital Tower, with floor-to-ceiling panoramas and buzzy Latin beats, SUSHISAMBA is one of those rare places that manages to be genuinely cool, unashamedly hip, and absolutely committed to putting the fun back into dinner, drinks, and dancing: yes even Wifey and I did indeed partake…

If your date still isn’t impressed after breezing through the giant bamboo installation and settling into a plush booth overlooking Marina Bay, you’ve got bigger problems than menu selection my friend. SUSHISAMBA Singapore throws three continents of culinary energy onto every plate, and does it in style—think Latin American sea bass anticuchos, miso-marinated mushroom seviche, samba rolls with lobster, and cocktails dressed up fancier than half the guests were this night we visited. 

Then throw in a samba dancer or two every hour, a wild DJ set on weekends pumping out Old Skool Toons, and low lighting meant to flatter even the hardest week at work (I might even suiggest I looked good this eve), and you’ve got a restaurant that ticks every “memorable night out” box. It is QUALITY, folks… total and absolute QUALITY and worth every cent we spent. Must-try. 

It really is up there in the upper echelons of Islifearecipe recommendations. Gold-class, neh, Platinum-class. Just go once and you will be hooked, just like you get hooked when you try that other stuff from Latin America.

Cool, Hip, and Above the City: Dining at SUSHISAMBA Singapore

There’s something about the energy at SUSHISAMBA Singapore that makes you want to stay longer than strictly decent, or our tired eyes would allow when Wifey and me went. Maybe it’s the way the place feels like a tropical garden party—warm, contemporary, splashed with colour, and always alive with chatter—maybe it’s the bar area, loaded with mixologists pouring caipirinhas and Japanese highballs until late, or the DJ spinning Afro-Brazilian and Latin grooves as the samba dancers sashay between tables. 

Basically, if you’re bored here, the problem is YOU.

The menu is a trip across the world’s best street markets, with enough glitter to satisfy the Instagram-happy crowd. Sushi fans will love the signature Samba Singapore roll—lobster, mango, avocado, and truffle in a soy wrapper is the kind of fusion that’s worth a little culinary diplomacy. Fresh ceviches pop with chilli and zesty dressing, robata-grilled skewers come deliciously smoky from the Josper, and there are beef anticuchos that could charm even the most loyal steak fan away from a “safe order.”

SUSHISAMBA is as much about spectacle as food: watch chefs at work in the open kitchen (which I love), ogle the epic sashimi platters, and sip cocktails while costumed dancers, and yours truly, rhythm their way across the floor like it’s Carnival in Rio. It works so well, it really does just work so well.

SUSHISAMBA Singapore Menu, Ambience, and Entertainment

SUSHISAMBA isn’t the sort of place where you come just for sushi and a quiet catch-up – hell no. It’s sensory overload in the best possible way. The Saturday Copacabana Brunch turns into a full-on spectacle: endless glasses of Champagne, DJs riffing off crowd energy, and dancers shaking enough feathered fans to scare a peacock sh!tless.

If your last restaurant brunch ended with polite applause and a complimentary petit four, you’re in for an upgrade. On weekdays, the set lunch crowd keeps things a bit more businesslike, but as the sun goes down, the tempo rises. By 8pm, expect the kind of high-energy Latin and Japanese mash-up that has made SUSHISAMBA a global nightlife icon in London, Miami, and Vegas, and now Singapore.

As for the food, don’t miss the empendas – holy moly, which manage to be both chewy gooey, super-rich and just insanely good, or the smoked pork crispy taquitos – I tell you just for this I would come back again, and again, and again:  SUSHISAMBA brings umami by the cartload, and isn’t embarrassed because it does.

EDAMAME @ SGD $14

  • Salty or spicy
  • Sea salt, yukari, lime (v, vg, gf)

It’s just edamame, right? Look at it, that’s what it is. But, and it is a big BUT. This is next level. This is I literally can’t stop eating, and licking my fingers and lips good. This basic dish is up there with the umami Gods. It’s smoked from the BBQ, I have to guess some Wagyu tallow on there, then crispy sea salt flakes, fresh lime juice and that Yukari: dried red shiso (perilla) leaves and salt. WOOF!!!

I tell you. I nearly passed out on first bite, it seriously is just so damned good. The very best edamame dish of any description I have ever had, and what a way to open the dining experience with Wifey. BOOMSKI!!!

DOUBLE TORO @ SGD $22 per piece / A5 JAPANESE WAGYU NIGIRI @ SGD $20 per piece

  • O-toro, chu-toro, yuzu oroshi, crispy garlic 
  • Aburi wagyu, garlic soy, foie gras, chives 

Top-end of town for all the above. Man alive, just so delish. Wifey was raving about how fresh the fish was and so delicious with the dippies. I tell you the Wagyu with Foie was killer. Bedfellows from foodie heaven. It just gets better and better here.

EMPANADA @ SGD $32 for three pieces

Chicken, red chili, onion, cheese. Not often am I left speechless. These little buggers made me completely mute. I have previously raved about Panamericana’s Empenadas (sadly now closed), but then these turned up in my life. WOW, DING DONG, WOOF and and and. These are incredible.

Crunch goes the pastry. Gooey goes the pastry. Smack goes the ever-warming spice. Umami slaps all over your mouth. Texture bombs going off everywhere. Goodness gracious me. Exceptional. You have to get these little things in your life at least once. Best-in-class.

JAPANESE A5 WAGYU GYOZA @ SGD $26

Kabocha purée, sweet soy. These were great. I think a little out-shone by other dishes above and below here in this review, but they were still totally delicious. Tender as Wagyu meat in these crunch chewy gooey (yes I keep using that phrase – but it is my absolute favourite food texture) little parcels. Simple, and simply delicious.

CRISPY TAQUITOS @ SGD $22 for two pieces

Pork smoked aji panca bbq, garlic, pickled cabbage, yukari, aji amarillo. And there I am happily gorging myself on all the above dishes, and then these bad boys rock up. I can’t even remember what I ordered now. Did I order this orange stuff? What is it? 

One bite later. A food orgasm occurred. I actually think my heart stopped for a little while in honour of this dish. This is a WTF on a plate. I implore you to go to Sushisamba and order this – please. Let me know what you think. I literally tipped the table over with my joy of just how damned good this is. 

I have to have this again or my life will not be complete. And there’s about five other crispy Taquitos on the menu we haven’t tried yet. OMG. They really are such a tease!!!

CRISPY OCTOPUS @ SGD $42

Miso kabocha purée, fennel herb salad, chimichurri. OK clearly not for myself, me being piscatorially “challenged”. A daunting dish too, as Wifey had to scale this mountain of pulpo alone. She said: 1/ Chewy. 2/ Tasty. My darling wifey is sh!t at restaurant reviews, but I love her dearly. I’ll just say – it looks amazing plated. WOOF!

LAMB CHOPS @ SGD $68

Aji panca, garlic, shallot. I’ll give this a 7/10. Over-shadowed, totally. It was nice, but did not face off against it’s brothers and sisters on the menu – you know who you are. Nice spice, a growing warmth, with a jammy sweet sour kind of hit. Real nice but smashed by the above.

Some restaurants lean into the “fine dining” label so hard you’re scared to spill sauce, or speak not in a hushed tone. SUSHISAMBA, meanwhile, wants you to relax, laugh, and let your hair down—maybe even join the dancers if you’re feeling bold (and running low on dignity, as I was this night – Dad dancing = so embarrassing).

This is the place to impress out-of-town guests, visiting family, celebrate promotions, or just WOW my beautiful Wifey with something wildly different for our date night.

Despite the glitz, the staff are genuinely warm and just so so friendly —recommendations are spot-on, and the service has all the humour and charm you want when forking up a $$$ for some raw fish under a disco ball. Yes, it’s pricey, but you get a show with your dinner, and like the best parties, you’ll be talking about it for ages – as I am right now.

It’s also rare to find a spot that pulls off such a grand fusion without lurching into the weird or the gimmicky. SUSHISAMBA Singapore manages it with flair, bejazzle, and the kind of attention to detail (in plating, in DJ playlists, in the choreography of the samba, and the staff) that actually justifies the ticket price. Whether you’re there for date night (highly recommended), a raucous brunch, or just to sip cocktails and pretend you’re living a more glamorous life, SUSHISAMBA delivers.

The food at SUSHISAMBA Singapore shines out with creativity, excitement, and the right amount of party on a plate. The drinks list is as flashy as the decor. It’s ideal for an occasion or whenever the urge to celebrate comes over you. You’ll come to SUSHISAMBA for the sushi and stay for the show.

This is the only spot in town where you can sip Brazilian-inspired cocktails, feast on Japanese Wagyu and Foie Gras Sushi, and find yourself surrounded by samba dancers high above the CBD—all in one night. It is categorically not halal. Have you checked the monster booze menu and proliferation of pork on the menu… Not a whiff of Halal it seems in Japanese Brazil fusion-land.

OK covered toes for the gents, so a little formal, and I get it. It really is top-end of town gorgeous so you don’t want some bloke in a vest and flip flops, whilst smuggling a budgie: oh no.
