Rhubarb & Strawberry Yoghurt, Basil & Biscuit Dessert
Doesn’t look half bad does it?

I have not made a dessert for a while. And as it was my Son’s birthday, and I was cooking a few dishes I thought hey let’s have a crack at a new dessert whilst I am at it. I was meandering through the supermarket and saw some ingredient. Ideas popped in my head. And from those ideas arose my Rhubarb & Strawberry Yoghurt, Basil & Biscuit Dessert.

Now if you can’t make this, may they cut off your hands – because you don’t deserve to have them.

This is SO SIMPLE.

To make a big bowl of Rhubarb & Strawberry Yoghurt, Basil & Biscuit Dessert, which is enough to serve 10+ people a small personal helping – you will need;

  • 3 packets of Tiramisu biscuits (also known as lady fingers);
  • 2 medium sized tubs of yoghurt – I used rhubarb & strawberry to go well with the basil; and
  • 1 pack of sweet basil that you simply rip or chop in to small pieces.

Take a big bowl, and in you go with all the ingredients above.

Stir it around until all the biscuits are coated and the basil is evenly distributed through the mix. You are finished. See how easy. Pop in the fridge until you are ready. Serve straight from the fridge in to individual bowls.

This is acidic because of the rhubarb & strawberry, but also sweet because of that. Then add in the whack of the basil which sort of counteracts the acidity. Then the slight bitterness coming through from the yoghurt and the CRUNCH of the biscuit. So flipping easy. Tastes incredible. Serves up looking like something from a fancy restaurant. I have been cooking since a small lad, as guided by my Nan and my Mum - gradually that morphed through exposure to Thai cooking from a lovely lady called Da in Margate. I used to hang out in her restaurant and watch the techniques. So the 1+1= greater than 2 occurred - Mum/Nan/Da - off I went in to the world of Asian cuisine. Moving to Asia in early 2000's clearly has brought that on somewhat - we travel continually, and eat locally and therefore have exposure to more and more new things. I have lived my dream and written a cook book whilst here, an amazing experience and all for a good cause too as I raised a lot of money for charity.
