ChefLam's Restaurant Review: The Man Behind the Magic at Guoco Towers

Let’s start with Chef Lam himself. He’s the kind of chef who will give you a look of sheer disappointment if you ask for ketchup or more salt. His passion for perfecting flavours and creating unforgettable dishes has made him quite. well-known name among those who take their Sichuan meals very, very seriously.

Chef Lam has cooked up a storm in some of his other kitchens, but now it is time for his new spot at Guoco Towers, Singapore which is designed to be more accessible to the populous of spice lovers. What a location it is.

The Vibes: Chic Yet Chill ChefLam's Restaurant Review

Walking into Chef Lam’s new joint will likely feel like stepping into a place where high-end dining and a laid-back atmosphere shake hands and agree to be best friends: whilst being covered in Sichuan peppers. The décor is likely to be minimalist, sleek, and stylish, but without that pretentious, stiff vibe that makes you afraid to touch anything, and speak in whispers over dinner.

Likely you’ll find natural light pouring through floor-to-ceiling windows, illuminating rustic wooden tables and chairs that practically beg you to take a seat. Add in some potted plants and soft lighting, and you’ve got yourself an Insta-worthy dining spot that doesn’t take itself too seriously: cos it’s focused at its food.

There might even be an open kitchen where you can watch Chef Lam and his team do their thang. Pro tip: Grab a seat near the kitchen if you want to feel like you’re part of the action: it’s food theatre baby. Of course this is subject to ChefLam having an open kitchen: just sayin’.

What is Sichuan Cuisine?

Sichuan cuisine is a bold and flavourful style of cooking that originates from China’s Sichuan province. Known for its fiery heat and complex layers of flavour, Sichuan dishes are famous for their liberal use of chili peppers, garlic, and the unique, tongue-tingling sensation caused by Sichuan peppercorns.

These peppercorns produce a numbing effect that, when combined with the heat of chili, creates the signature “mala” (numbing and spicy) flavour profile that sets Sichuan cuisine apart. Popular dishes like Kung Pao Chicken, Mapo Tofu, and hotpot showcase the region’s love for spicy, mouthwatering flavours.

However, Sichuan cuisine is more than just heat. It’s known for its variety of tastes, ranging from sweet and sour to salty and smoky. Dishes are often balanced with vinegars, fermented bean pastes, and aromatic spices, offering a harmonious combination of flavours that excite the palate.
