Mediterranean Breakfast

Day two of staycation, and time to cook breakfast for the family. Today I made a Mediterranean Breakfast, of sorts. It’s got Chorizo, turmeric and paprika so I think that qualifies for Mediterranean, don’t you? A very simple recipe that is so bloody tasty. A fantastic breakfast, in fact, that was consumed by all in silence.

Come on you have to admit that does look bloody good. Don’t you?

This is all baked in the oven at 200 degrees, on one baking tray, covered with some foil. See what I mean about easy. Mediterranean Breakfast could not get simpler to be honest. Per person you will need;

  • 1 average sized Chorizo sausage cut in to bite sized pieces;
  • 2 rashers of streaky bacon cut in to bite sized pieces;
  • 1 egg; and
  • A handful of spinach, that I had tossed in some Olive oil and finely chopped garlic.

How easy is that. Get them all on the baking tray and in the oven. Give them a little turn every now and then. What will happen is that the oil from the Chorizo and bacon will start to get in to the spinach and egg as well. OMG how good is this going to be. Keep moving them about until cooked. The spinach is likely first, so put that in the bottom of a bowl, lay the bacon and Chorizo on when cooked through and then the egg. There is your Mediterranean Breakfast. YUMMO!

I finished this off with a sprinkle of Turmeric and Paprika, as you can see in the photo above. This is a cracking breakfast that could adorn the table of any fine dining establishment. It was delicious, absolutely stonking in fact. So please give this one a go, it is so easy to make, and so easy to consume once made. This is my Mediterranean Breakfast – ENJOY!!!

Father of 3. All my kids are mixed, with English-Japanese, and English-Filipino - a recipe in the making there. I have been cooking since a small lad, as guided by my Nan and my Mum - gradually that morphed through exposure to Thai cooking from a lovely lady called Da in Margate. I used to hang out in her restaurant and watch the techniques. So the 1+1= greater than 2 occurred - Mum/Nan/Da - off I went in to the world of Asian cuisine. Moving to Asia in early 2000's clearly has brought that on somewhat - we travel continually, and eat locally and therefore have exposure to more and more new things. I have lived my dream and written a cook book whilst here, an amazing experience and all for a good cause too as I raised a lot of money for charity. My blog is now hopefully turning in to book number 2. Watch this space. I hope you enjoy my passion.
