SKAI at Swissôtel The Stamford Singapore – Lunch Review
Dining at SKAI on the 70th floor of Swissôtel The Stamford is as much about the view as it is about the food. The floor-to-ceiling windows offer a spectacular cityscape, but we were here for the food – and it largely lived up to the setting sadly the service was severely lacking on this occasion.
We popped along for a late afternoon bite at Skai a few weeks before based on the opening times on Google My Business and was met with a very unfriendly receptionist at the ground floor reception, I even bothered to leave a negative Google Review based on this experience, so far the hotel has not responded to that comment. Despite that for some bizarre reason we decided to book in advance to try to get a table for a special occasion.
Skai Service Levels Standards have Dropped
Sadly the staff at this outlet all seem to have the same attitude! At the reception on the 70th floor we had to wait whilst the staff dealt with someone wearing a t-shirt, shorts and flip flops, so much for dress code reminders they sent me the day before!
We were finally seated at a nice area at the back of the restaurant at a table near the Tuna Bar which had a fantastic view. Unfortunately being out of site we were out of mind it took them some time to get back to us with a menu and then again take our drinks order. When we had our hand up to garner attention I could see two other tables having the same request.
I got a sense there are not enough staff for the size of the venue because service lacked throughout the meal and even when served it was done with some distain.
Our main server was someone called Sherwin, who chose not to speak much throughout our meal when serving but what was strange was that after our main course he served us desserts that we did not order, once we indicated it was not for us he picked them up without a word and took them back temporarily to the kitchen before redelivering them to another table nearby.
I decided to confront Sherwin on this and he said “for that I apologize“, I said but you have only apologized because I raised the issue.
The lunch was a celebration for my Daughters 18th which Skai Restaurant team knew about in advance, so it was a very special occasion indeed. When Sherwin placed a Slice of Birthday cake in-front of my Daughter he said “Here is your Complimentary Birthday Cake“
The food was good, overpriced but you are paying for the view, certainly not the service! Although the 9% GST included the ++ all the same! No Additional Tip was given!
We decided not to order any coffee or dessert and take our patronage elsewhere and won’t be returning to Skai Restaurant again based on our experience!
That being said we have eaten at Prego and The Stamford Brasserie at Swissotel The Stamford and received incredible service, so this is clearly not a hotel issue but a venue problem.
Here was the final shocker for us, the next day we received and automated email from Skai c/o of friends at SevenRooms:

“Dear Sherwin, not a chance in hell, especially if you are still the restaurant manager” should have been my reply but this email can’t be replied to!
This only proved to me why all the staff had the same bad attitude, it comes from the top down!
Even as we received our bill the same person who greeted us slowly at reception hurried us out as they needed to clear tables for the High Tea! If only she was as in a hurry to get us seated as she was to kick us out! Talk about bad service from start to finish, at least they were consistent!
My Daughter who has worked as a temp staff in restaurants in some 5 Star Hotels was very unimpressed to say the least.
We rarely do a negative review on our site but I honestly felt this deserved one, I doubt anything will change at Skai Restaurant for the foreseeable future, so make your decision to choose Skai wisely!
Lastly, when I told a group chat of our bad service at Skai Restaurant someone commented that they also had bad service at Level 33 the same day, it must be altitude sickness related then!

What we Ate at Skai Restaurant
Starters
Beef Tartare – $30
A standout. This Wagyu Beef Tartare was seasoned with gochujang and topped with an egg yolk jam, giving it a subtle heat and creaminess. The texture was impeccable – tender, with enough bite – and the acidity from pickled vegetables, capers, and gherkins cut through the richness beautifully. Each mouthful balanced fat, tang, and freshness. Easily one of the best versions we’ve had in Singapore although L’Angelus still holds the Best Beef Tartare Title in Singapore for me!
Burrata – $38
Served with heirloom tomatoes and caponata, the Burrata was fresh and creamy, though not particularly groundbreaking. The sweetness of the tomatoes and the slightly tangy caponata made for a pleasant pairing, but for the price, we expected a bit more complexity.
Beetroot – $26
This dish surprised us. Roasted beetroot with endive and candied walnuts offered a satisfying combination of earthiness, bitterness, and sweetness. The textures were well-executed – crunchy, tender, and creamy all at once. A solid vegetarian option that didn’t feel like an afterthought.
Chicken Liver & Foie Gras Parfait – $34
Rich and silky, this parfait was smooth and decadent, with a delicate truffle aroma and a hint of sherry vinegar that lifted the dish. The Timur pepper added a subtle, citrusy spice. Spread over crisp bread, it was indulgence in every bite.
Main Course
Lamb – $60
Grilled lamb chops with eggplant purée and pomme dauphine. Perfectly cooked – pink in the centre, seared on the outside. The lamb was tender and flavourful, complemented by the creamy eggplant and the crispy yet fluffy pomme dauphine (essentially an elevated potato croquette). The red chilli garnish added a gentle kick, while fresh herbs brought brightness.
Flat Iron Wagyu Steak – $85
This Australian Wagyu Westholme Flat Iron steak was beautifully seared and rested, with a peppercorn crust giving a subtle bite. Juicy, with that deep umami you expect from Wagyu. The accompanying wedge salad with yuzu dressing was refreshing, and the smidgen of sweet potato purée on the side added a velvety contrast.
Cod – $65
This was the Miso Black Cod with smoked dashi and ikura. A beautifully flaky piece of fish, slightly caramelised on the outside. The smokiness from the dashi broth combined with the salty bursts from the ikura was sublime. Bonito flakes on top added umami, and the overall presentation was elegant, plain but simple.

Sides & Salads
Tomato Salad – $18
Fresh tomatoes paired with smashed cucumber, basil, and a light esplette dressing. Simple but refreshing, with the cucumber adding a cooling crunch.
Lettuce Wedge – $9
A basic wedge gem lettuce salad with radishes and herbs, dressed in a light yuzu vinaigrette. Crisp and clean, a palate cleanser amidst the heavier dishes.
