Huevos River Valley – New Bahru’s Go-To Spot for Bold Mexican Flavours
Huevos made its name on Middle Road with big flavours and generous tacos, so a second outpost tucked into New Bahru’s creative playground in River Valley was always going to be exciting.
This River Valley branch is the “smoky twin”, built around the grill – so you get that extra char and sear on meats and specials, on top of all the classics you already love.
The room feels fun and relaxed: corrugated metal, high tables, colourful lucha-libre murals and an open kitchen that keeps the energy buzzing without trying too hard.
Starter: Huevos Mango Swordfish Ceviche
I opened with the Huevos Mango Swordfish Ceviche and this is exactly how I like to start a Mexican meal – bright, zesty and wildly snackable.
The swordfish comes in chunky cubes, cured just enough to stay bouncy, then tossed in a lime-forward coconut dressing with sweet mango, jalapeños and jicama for texture.
Add a pile of thin, crisp tortilla chips on the side and you have a dish that disappears frighteningly quickly, especially with something cold and citrusy in hand.
Main Event: Beef Tongue Tacos (Lengua)
For the main course I went straight for the Lengua Beef Tongue Tacos – and if you’re comfortable with offal, this is non-negotiable.
Each tortilla is packed with thick slices of tender beef tongue, seared on the grill for those addictive caramelised edges, then piled high with salsa verde, onion salsa, confit piquillo peppers and a lively pickled habanero.
I ordered two tacos and instantly wished I had gone for three, especially after I discovered how well a big spoonful of their sambal works with the rich meat and tangy salsas.
Other Tempting Things on the Menu
Even if you somehow resist the beef tongue, Huevos River Valley has plenty of other dishes shouting for attention. Here’s a quick grid of what caught my eye on the menu:
- Cauliflower Tacos: Spiced breaded cauliflower with lettuce, poblano crema, pico de gallo and cotija cheese.
- Baja Fish Tacos: Spiced-breaded fish with slaw, mango salsa and chipotle aioli.
- Carnitas Pork Tacos: Confit pork with salsa verde, onion salsa and cheese.
- Barbacoa Lamb Tacos: Slow-cooked lamb in banana leaves with salsa roja and confit piquillo peppers.
- Birria Beef Tacos: Beef short rib and brisket with cheese, onion salsa and a side of beef consommé.
- Loaded Nachos: Tortilla chips with cheese, chipotle aioli, sour cream, guacamole and pico de gallo.
- Elotes: Hokkaido sweet corn on the cob with chipotle aioli and cotija cheese.
- Aguachile: Cured Argentinian red prawns with serrano, cucumber, radish and guacamole purée.
- Churros: Freshly fried churros with dark chocolate ganache or dulce de leche.
Drinks – From Margaritas to Zero-Proof
The printed drinks list is already playful – frozen and shaken margaritas, house spirits, beers and a full spread of zero-proof options like agua fresca, horchata, tepache and slushies.
Even better, they now do zero-proof margaritas so non-drinkers can still get that salt-rim-and-lime moment while everyone else hits the tequila.

I was at Huevos River Valley for a tasting of Barnes & Brown Miss Agave and Barnes & Brown Lady Marmalade, their alcohol-free triple sec.
The team mixed Miss Agave into a Paloma-style zero-proof serve for me to try – it’s not on the menu, but it showed just how much structure and real citrus complexity you can get without alcohol.
Lady Marmalade, with its bright orange notes, slots in neatly anywhere you’d normally expect triple sec, opening the door to proper alcohol-free margarita riffs rather than sugary “mocktails”.
El Yucateco Hot Sauce – Green vs Red
Every table at Huevos comes armed with two Mexican legends: El Yucateco Green Chile Habanero and El Yucateco Red Chile Habanero.
The green sauce is bright, tangy and a touch hotter – powered by green habaneros, garlic and spices that slice through rich meats and creamy toppings.
The red bottle is a little milder but deeper and more savoury thanks to a tomato and red habanero base, making it my go-to for anything cheesy or beefy.
La Cofradia Tequila & the Agave Back Bar
If you’re an agave nerd, you’ll have a good time just scanning the bottles behind the bar – Huevos often pours labels brought in by East West Asia.
One stand-out is La Cofradia Tequila, with smooth, characterful expressions that are just as happy in a sipping glass as they are in a margarita.
Between La Cofradia, the house margaritas and the zero-proof Miss Agave option, you can pretty much tailor your night around agave – with or without the alcohol.
Huevos River Valley – Final Thoughts
Huevos River Valley nails what a modern Mexican spot in Singapore should be: big flavours, honest portions, proper heat and a room that works for casual dates, family dinners and New Bahru food crawls.
Come for the beef tongue tacos and mango swordfish ceviche, stay for the hot sauces, margaritas, zero-proof drinks and the agave back bar that keeps things interesting.
