Cooking Class @ TOTT, with Chef Julie Yee

Cooking Class @ TOTT, with Chef Julie Yee We I have to say this was great fun. Back in June, Mary bought me a gift card, and today I honoured it having a Cooking Class @ TOTT, with Chef Julie Yee. I decided on this course because it was Thai Cuisine, and very good cuisine it was too. 3 other budding cooks were in the class. We ended up making 4 dishes in total; Homemade green curry, Thai olive fried rice, Thai fish and prawn Otah mousse, and Thai steamed sponge boat. Great work Chef Julie, I ...

Sandbank @ Parkland Green

Sandbank @ Parkland Green Whilst having a lovely staycation a week ago, we decided to frequent Sandbank @ Parkland Green. Yes that place where Mary and I had our wedding reception. The one with the swimming pools out the front. Beautiful place, lovely and airy with gorgeous sea breezes wafting you as you eat. And also some pretty damned good food. What did we eat?Really, really nice. Super creamy avocado on garlic bread. Get a little sprinkle of salt on to this and it is heavenly. Good ...

Mediterranean Breakfast

Mediterranean Breakfast Day two of staycation, and time to cook breakfast for the family. Today I made a Mediterranean Breakfast, of sorts. It's got Chorizo, turmeric and paprika so I think that qualifies for Mediterranean, don't you? A very simple recipe that is so bloody tasty. A fantastic breakfast, in fact, that was consumed by all in silence. This is all baked in the oven at 200 degrees, on one baking tray, covered with some foil. See what I mean about easy. Mediterranean Breakfast ...

Baby Jude’s Wagyu Beef Pie

Baby Jude's Wagyu Beef Pie I am on a staycation at the moment, so spending lots of time at home with Mary and the kids. That clearly translates in to time to do some home cooking, which is ACE. That happened today, when we created Baby Jude's Wagyu Beef Pie.Mary had tasked Jude and I to pop over Cold Storage to get some bits and pieces. Whilst Jude was sat in the trolley he kept pulling things from the shelves - soya beans, mushrooms, tomatoes, sausages etc. What to do with this lot I ...

Marmite Wagyu Beef

Marmite Wagyu Beef I bought this gorgeous slab of Waygu rump goodness yesterday from Zac Butchery. Today I made Marmite Wagyu Beef. This came out quite amazing. Sticky, salty, sweet, savoury all in one. One big unctuous pile of Wagyu beefy goodness. Yummo! This is really so very easy, but the resulting outcome is something quite special. A glistening pile of beautiful medium rare Wagyu rump, covered in a delicious sticky marinade. Oh yes, I'll have that every day of the week thanks! I ...

Wagyu Beef & Foie Gras Bottomless Pie

Wagyu Beef & Foie Gras Bottomless Pie Here's a recipe for a dish that you won't se every day - a bottomless pie, but also its a Wagyu Beef & Foie Gras Bottomless Pie. I made this for lunch today, down by the swimming pool. Kids swimming and me cooking, chilling sounds pumping, beer in hand. True bliss. This made enough enough for about 6 pies. Very very nice. I have done a video for you as well, pretty simple to explain that way through the magic of video, but for the purists ...

Asam Pedas Gravy with Bone Marrow

Asam Pedas Gravy with Bone Marrow Remember Tioman Island blog. Remember this dish below - the delicious Asam Pedas Oxtail dish.Mine clearly looks a lot different - bit more turmeric, no bones per se. So slight issue I have is getting access to bones in Singapore. The ones in Malaysia had like huge lumps of steak hanging from them, and bones marrow galore - here in Singapore I find the oxtail bones to be like those of a whippet dog - tiny. So improvise whilst still trying to keep a ...

Indian oxtail & lentil curry

Oxtail & lentil curry If I remember rightly this creation came from eating a brunch one day on our ravels through Asia. I fell in love with the dish immediately and swore to myself that I need to re-create my own version, and strangely enough this is how my Oxtail & lentil curry was created. If I remember correctly I had this curry in Penang when Mary and the kids and I visited once. So in honour of that memory I created this dish in July 2013 - Oxtail & lentil curry. I used ...
