Amy’s Breakfast Recipe

Amy's Breakfast Recipe Inspired by my mate @Mark Mottram, of Bakery & Bar. Amy's Breakfast Recipe today came out of the blue, after having had a look in the fridge at what's on offer. I ended up with this Frittata come Omelette, served in a bread 'plate'. I took a big two inch deep slab of Mark's sour dough bread. I then used one of my food stacker rings to cut out a circle in the middle of the bread - don't cut all the way through, as this is literally and edible bowl. A quick whizz in ...

Black Pudding with Coarse Cheese and Horseradish

Black Pudding with Coarse Cheese and Horseradish I just got back from The Philippines for a conference. As usual crappy food on the plane, so a little peckish what can I eat? A quick rummage in my food fridge, and I spot the stuff I bought last week at my mate Chris's, The Cheese Shop @ Joo Chiat. And what did I create, well I created Black Pudding with Coarse Cheese and Horseradish. ALL items were bought from his joint. I am so happy now, knowing that this is going to taste so so good. I'm ...

Water Cress and Edamame Cream Soup With Crispy Bacon

Water Cress and Edamame Cream Soup With Crispy Bacon I was having lunch recently with my great mates, Spencer and Tobias. Whilst we were eating they started talking about this amazing soup they had eaten recently. Tobias had stolen the recipe from the restaurant and had also recreated it already for personal consumption. So now as a third hand-me-down, I also stole it, but made a few of my own twists and turns. So from a water cress and pea soup I created my own version, here is Water Cress ...

Kennett’s Kilo Under Pressure #2

Kennett's Kilo Under Pressure #2 Starter anyone? Here is my first course that I am planning to do for 6th October. Singapore Roast Pork Belly with Apple Mustard Puree. This is Kennett's Kilo Under Pressure #2. 4 hours slow cooking this puppy to get this amazingly moist pork belly with crackling to die for, and a secret marinade that packs a sweet sweet flavourful punch. Kennett's Kilo Under Pressure #2, went very well at practice today. My starter recipe is finalised in my eyes. Now ...

Breakfast Egg Fried Rice Stackers

Breakfast Egg Fried Rice Stackers Wish I was two years old again ha ha - this was Baby Jude's breakfast today. I tell you what that looks damned good doesn't it. This was his Breakfast Egg Fried Rice Stackers. A nicely layered and stacked egg fried rice dish made up on the spot, and then decorated with some basil leaves out of our herb garden, and some dried roses I picked up at the Golden Mile Thai Delicatessen. I think it looks gorgeous as a dish and would look amazing in any restaurant - ...

Breakfast Avocados You have to give this one a try folks, this is my Breakfast Avocados. This is sort of stolen, and then adapted from my great mate back in the UK - a certain Dave Bayliss. Thanks for this one Dave. Went down a storm this morning for Valentine's Day brekkie. Top recipe pal, but you know me I can't just copy so of course I have adapted it a tad to be my own version. Banh Mi

Banh Mi Here comes my play on Banh Mi, the world famous Vietnamese sandwich. I have to say this turned out to be quite amazing for something so simple in preparation. In fact I probably should have made about another 4 loaves worth of it as it was gone in the blink of an eye and that was 3 loaves worth. Literally I cut it up, served it and it was gone. A very good sign of course. You are SO going to like this one. You can watch the video - but here is the recipe as well for my Banh Mi. I ...
